Description of Apilco 2-Quart Porcelain Galantine/Pate Mold

Distinctions blur among forced-meat, seafood, and vegetable dishes (and even desserts) called galantines, p?t?s, and terrines. Whenever one of the terms appears in a recipe, this rectangular mold (11-1/4 by 4-1/4 by 3-3/4 inches, length by width by height) is appropriate. It's also designed for p?t? en cro?te, in which a filling is baked in a pastry shell. Most of these preparations are served chilled, and Apilco porcelain goes safely from the oven to the refrigerator. Casserole preparations that don't need covering, like crusty baked pasta, can be cooked in this dish, too. --Fred Brack
