Description of Apilco 4-Inch Round Porcelain Quiche/Flan Dish
By fulfilling French chefs' specific requests for generations, Apilco developed the world's broadest line of porcelain cooking and serving ware and became France's largest porcelain manufacturer. Respected worldwide, Apilco porcelain is fired at a higher temperature than customary, resulting in hard, durable products that resist chipping and cracking and can last a lifetime. Care is simple. Nonporous Apilco porcelain resists staining, and its smooth, bright surface cleans with scrub-sponge or cloth. It's also lead-, arsenic-, and cadmium-free.In classic white, with the traditional souffl?-dish ribbed exterior, this shallow, 4-inch-diameter dish serves as a cooking and serving vessel for the silken custard known as cr?me br?l?e. Because Apilco porcelain is safe in the oven, refrigerator, or even the freezer, the custard can be baked in the dish and chilled, and then its sugar crust can be melted under a broiler or with a kitchen blowtorch. Despite the name, this is a not a single-use dish. Elegant quiche or lemon tarts can also be prepared in it, and at the table, this dish is perfect for jam, butter, sauces like aioli, and other condiments.
